Ingredients:

4 skinless salmon fillets

3 tablespoons of honey

2 tablespoons of Dijon mustard (or your preferred variety)

1 tablespoon of soy sauce (optional, for a saltier touch)

1 clove of garlic, grated

Juice of half a lemon

Freshly ground black pepper to taste

Method:

Prepare the glaze: In a bowl, mix the honey, mustard, soy sauce, grated garlic and lemon juice. Stir well until smooth.

Marinate the salmon: Place the fillets in a dish and generously coat with the glaze. Leave to marinate for 15–30 minutes (longer if possible).

Preheat the BBQ: Light your barbecue and prepare it for direct cooking at a medium-high temperature. You can use a griddle or place the salmon directly on a pre-oiled grill.

Cook the salmon: Grill the fillets for 3–4 minutes per side, depending on thickness, brushing with more glaze as they cook. The centre should remain juicy but firm.

Serve and enjoy: Pair with grilled vegetables, rice or a fresh salad. A sprinkle of chopped chives adds extra flavour and colour.
