INGREDIENTS
- Chicken Wings (1-2 kg)
- Black Food Coloring
- Pimento Peppers (4-6, top sliced off)
- Shredded Cheese (Cheddar, Monterrey Jack, or your favorite blend)

METHOD
- Prepare the Ghost Sauce: In a small bowl, mix the black food coloring into your ghost sauce until it reaches a deep, eerie black hue. This sauce will give the wings a creepy, Halloween-worthy appearance!
- Marinate the Wings: Generously coat the chicken wings with the blackened Ghost Sauce using a basting mop. Ensure all the wings are evenly covered. Place them in a zip lock bag or bowl and let them marinate for at least 1 hour, or overnight for a more intense flavor.
- Prepare the Stuffed Peppers: Take your pimento peppers and remove the tops. Stuff each pepper with a mixture of shredded cheese and sliced jalapeños. Season with salt and pepper. Optional: Wrap with prosciutto ham. Set aside for grilling.
GRILLING
- Set Up the Barbecue: Preheat your barbecue to medium-high heat, aiming for a temperature between 200ºC-220ºC.
- Grill the Wings: Arrange the marinated chicken wings on the wing rack and place them on direct heat (if using a gas barbecue, reduce the heat to low-medium). Grill the wings for about 40-45 minutes, turning occasionally to get an even char.
- Grill the Stuffed Peppers: After 10 minutes of grilling the wings, place the stuffed pimento peppers in the pepper roaster and add them to the grill. Let both the wings and peppers cook for the remaining grilling time.
- Finish: Once the wings are cooked, optionally glaze them with a bit more ghost sauce for an extra kick of flavor and spooky look.
PLATING
- Spooky Presentation: For a fun and eerie presentation, print out labels with the scientific names of bats and arrange them on a cutting board or large platter. Place the chicken wings over the labels, giving the impression that these “bat wings” are ready to devour!
