Garlic Herb Butter Roast Chicken                

There’s nothing better than an easy to make and even easier to prepare roast chicken! The magic is in the flavour, with garlic butter, rosemary, parsley, lemon, and a hint of white wine.


Method

  1. Preheat the oven to 220°C.

  2. Rinse the chicken and pat dry with a paper towel.

  3. Combine olive oil, melted butter, wine (if using) and lemon juice together in a bowl. Rub the marinade all over the chicken, under the skin and inside the cavity.

  4. Season the chicken outside and inside with salt, pepper and parsley, and don’t be afraid to use generous amounts!

  5. For a punchier garlic taste, rub the minced garlic over the chicken and under the skin separately.

  6. Stuff a garlic head into the chicken cavity along with the rosemary sprigs and the squeezed lemon halve. You can also use sprigs of Thyme or any other herb.

  7. Place the chicken on a roasting tray into the oven, or for better cooking results and to maximise flavour place the chicken on the Broil King® chicken roaster in the oven.

  8. Roast for 1 hour and 15-20 minutes, making sure to baste half way through cooking time, until juices run clear when chicken thigh is pierced with a skewer. Baste again, then broil for a further 2-3 minutes, until golden.

  9. Remove the chicken from the oven, and cover with foil. Allow it to stand for 10 minutes before serving.
