Hawaiian Prawn Skewers with Mint and Honey

Preparation Time – 20 minutes

Cooking Time - 15 minutes


INGREDIENTS

  • 15 to 20 prawns, peeled

  • 1 tablespoon olive oil

  • 2 tablespoons lime juice

  • 1 teaspoon garlic

  • 2 tablespoons honey

  • 60ml soy sauce

  • 1 teaspoon ginger

  • 1 teaspoon black pepper

  • Handful of pineapple chunks

  • Freshly chopped mint to serve

  • Metal or wood skewers from The Barbeque Shop

METHOD

  1. In a bowl, combine the oil, lime juice, soy sauce, garlic, black pepper and honey, then set aside. Pop the prawns into the mixture and allow to marinate for at least 20 minutes.

  2. Preheat the grill to a medium high heat and assemble the prawns and pineapple, alternating as you go.

  3. Place the skewers on the grill and baste occasionally with the leftover marinade. Grill until the prawns turn a reddish-pink or for 3 to 4 minutes per side.

  4. Finish the skewers off by adding the chopped mint. Enjoy!
